Learning Objectives

After reading the chapters, the student will know:

  1. Why we choose the foods we eat; the difference between nutrients and essential nutrients; the six classes of nutrients and the difference between organic and inorganic nutrients.
  2. Nutrient yielding energy and how thats measured; why alcohol is not a nutrient.
  3. How research is conducted, the use of nutritional surveys, and how the variables might be correlated but not causal.
  4. What is a DRI and what is involved in setting energy intakes.
  5. Chapter's vocabulary terms and desired nutrition information and misinformation.
  6. Dietary Guidelines for America; the five food groups and how to plan a healthy diet.
  7. Understand the strengths and weaknesses of this plan.
  8. How to read a food label and understand labeled health claims.
  9. The differences in food guides from other countries and compare them to ours.
  10. Each chapter's vocabulary terms.

Food Label Exercise
