Learning Objectives

After reading the chapters, the student will know:

  1. The process involved in food digestion in the body and the path it takes.
  2. The organs and muscles used in the digestive process.
  3. How blood is routed through the digestive system and how it coordinates and regulates the processes of digestion and absorption.
  4. The effect the diet has on the GI tract, how the GI tract functions best.
  5. The most common digestive problems associated with everyday living.
  6. The difference between a simple and complex carbohydrates; understand the digestion and absorption process of carbohydrates and how fiber plays a role in this process.
  7. The structure of monosaccharides, disaccharides, polysaccharides, where they are found and the role they play in nutrition.
  8. How the body maintains blood glucose concentration. What happens when blood glucose rises too high or falls too low?
  9. The health effects of sugars, starches and fibers and their dietary recommendations.
  10. Foods that provide starches and fibers; the alternatives to sugar.
  11. Each chapter's vocabulary terms.
