After reading the chapters, the student will know:

- The functions of lipoproteins. The difference between chylomicrons, VLDL, LDL, HDL and they effect total blood cholesterol.
- How the chemical structure of proteins differs from that of carbohydrates and fats.
- The process of protein digestion and absorption.
- The essential amino acids and their roles in the diet; examine Vegetarian diet.The differences between complete and incomplete proteins. The consequences of eating excessive or inadequate amounts of protein.
- Identify sources of reliable health information.
- The factors considered in establishing recommended protein intakes.
- Each chapter's vocabulary terms.
