Learning Objectives

After reading the chapters, the student will know:

  1. The three classes of lipids found in the body and foods; their features and function in the body.
  2. The difference between saturated, unsaturated, monounsaturated and poly unsaturated fats. The structure of a triglyceride.
  3. Advantages to omega fatty acids.
  4. The steps in fat digestion, absorption and transport; daily value of fats and cholesterol.
  5. The functions of lipoproteins. The difference between chylomicrons, VLDL, LDL, HDL and they effect total blood cholesterol.
  6. How the chemical structure of proteins differs from that of carbohydrates and fats.
  7. The process of protein digestion and absorption.
  8. The essential amino acids and their roles in the diet; examine Vegetarian diet.The differences between complete and incomplete proteins. The consequences of eating excessive or inadequate amounts of protein.
  9. Identify sources of reliable health information.
  10. The factors considered in establishing recommended protein intakes.
  11. Each chapter's vocabulary terms.
