Learning Objectives

After reading the chapters, the student will know:

  1. The definition of coenzymes and the role they provide in metabolism.
  2. The four basic units, derived from foods, used by the body in metabolic transformations. How carbons are the back bones of each.
  3. The main steps in the metabolism of glucose, glycerol, fatty acids and amino acids. How a surplus of energy nutrients contributes to body fat stores.
  4. The process of a loss of fat compared to the loss of weight, and describe how each might happen; the effects of alcohol on the body.
  5. The consequences of an unbalanced energy budget; risks associated with excess body weight and excess body fat; latest in weight loss diets.
  6. The definition of each component of energy expenditure; the list of factors that influence each; how energy expenditure is estimated.
  7. The list of risks that are associated with excess body weight and excess body fat; the problems involved in defining ideal body weight.
