Learning Objectives

After reading the chapters, the student will know:

  1. Description of how body fat develops and why it's difficult for an obese person to maintain weight loss. The list of factors that contribute to obesity.
  2. The aggressive ways to loss weight and why such methods are not recommended for everyone.
  3. The behavioral strategies used to change dietary habits and the role of physical activity in a weight-loss program.
  4. Eating disorders and how they affect the body.
  5. How fat and water soluble vitamins differ from energy nutrients.
  6. The main functions of water soluble vitamins; the B vitamins role in energy metabolism, protein metabolism and cell division.
  7. The characteristic deficiency symptoms of Vitamin C and the B complex.
  8. The relationship of tryptophan to niacin; and folate to Vitamin B12.
  9. Vitamin and mineral supplement claims; the risks with high doses of niacin, vitamin B12 and vitamin C.
  10. Each chapter's vocabulary terms.
