Learning Objectives

After reading the chapters, the student will know:

  1. The fat soluble vitamins; the ways they are the same and different than water-soluble vitamins.
  2. The precursors of vitamin A; examples of foods high in vitamin A activity.
  3. The functions, source, deficiency and toxicity of Vitamins A, D, K and E.
  4. Antioxidant nutrients and their role in disease prevention.
  5. The roles of water in the body; how the body used electrolytes to regulate fluid balance.
  6. The characteristics of minerals that distinguish them from vitamins.
  7. The major function and sources of sodium, calcium and phosphorus in the body.
  8. The major functions of chloride, potassium, magnesium, and sulfur in the body.
  9. Identify whether deficiencies are likely to occur in ones diet.
  10. Each chapter's vocabulary terms.
