Learning Objectives

After reading the chapters, the student will know:

  1. The different types of iron; the factors that affect its absorption and the differences between iron deficiency and iron-deficiency anemia.
  2. The similarities and differences in the absorption and regulation of iron and zinc.
  3. Factors that affect the bioavailability of zinc.
  4. The importance of a balanced and varied diet in obtaining the essential minerals and avoiding toxicities. Sources of Phytochemicals and their function in the diet.

  6. The relationships among energy expenditure, type of activity and oxygen use.
  7. The factors that influence the bodys use of glucose, fat and protein during physical activity.
